In Shopify, the option Continue selling when out of stock controls whether an item can still be ordered when stock runs out. In PlentyONE, this behaviour is managed via the Stock limitation setting for each variation.

When exporting stock levels, the Shopify option is automatically set based on your configuration in PlentyONE.
