Since the transition to plugin payment methods (EOL non-plugin payment methods) in June 2021 and the switch to the new order UI, only plugin payment methods can be used.
Basically, only the plugin (e.g. Purchase on account) needs to be installed at least in the main client and the assistant needs to be completed.
